  • 2 cups flour
  • 1 ½ cups brown sugar
  • 1 cup cold butter, sliced
  • 1 ½ cups oats
  • 2 (8 oz.) packages cream cheese, room temperature
  • ½ cup sugar
  • 3 eggs
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
  2. In a food processor, pulse together flour and brown sugar. Add cold butter and pulse until crumbly. Mix in oats.
  3. Reserve 1 ½ cups of the crumb mixture for topping; press the remaining mixture into the bottom of the pan. Bake for about 10 minutes.
  4. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in milk, vanilla extract, lemon juice, and zest until creamy.
  5. Pour filling over the baked crust and sprinkle reserved crumbs on top. Bake for an additional 15-20 minutes or until lightly browned.
  6. Allow to cool completely before slicing.
