  • 2 large chicken breasts
  • Salt and pepper (to taste)
  • Flour (for dredging)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 12 ounces sliced mushrooms (cremini or white)
  • 1/4 teaspoon Italian seasoning
  • 3 cloves minced garlic
  • 1/2 cup chicken broth
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy cream

Instructions

  1. Cut chicken breasts in half lengthwise; season with salt and pepper and coat lightly in flour.
  2. Heat olive oil in a skillet over medium-high heat; cook chicken cutlets for 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, melt butter and sauté mushrooms with Italian seasoning until seared.
  4. Remove mushrooms; add garlic, chicken broth, lemon juice, and mustard to the skillet. Simmer until reduced by half.
  5. Stir in heavy cream; return chicken and mushrooms to the pan. Cook for an additional 5 minutes until heated through.
