  • 1 lb rigatoni pasta
  • 1 lb ground beef (80/20)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste

Instructions

  1. Cook rigatoni in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until softened, then add garlic and cook for an additional minute.
  3. Add ground beef to the skillet, breaking it apart as it browns for about 6–8 minutes; drain excess grease.
  4. Stir in tomato paste, Italian seasoning, red pepper flakes, salt, and pepper; cook for another 2–3 minutes.
  5. Pour in beef broth and heavy cream; simmer for 5–7 minutes until slightly thickened.
  6. Gradually mix in Parmesan cheese until melted, followed by mozzarella cheese for extra creaminess.
  7. Combine cooked rigatoni with the sauce; toss well to coat. Adjust consistency with reserved pasta water if needed.
