  • 12 oz whole wheat pasta (penne or tortiglioni)
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth (or reserved pasta water)
  • 3 cloves garlic, minced
  • 2 cups fresh spinach or kale (optional)
  • Olive oil, to taste
  • Italian seasoning, to taste
  • Red pepper flakes, to taste
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook pasta in salted boiling water until al dente; reserve ½ cup pasta water and drain.
  2. In a skillet, heat olive oil over medium heat and cook chicken until golden brown; set aside.
  3. In the same skillet, sauté garlic until fragrant. Add ricotta, Parmesan, chicken broth, and stir until smooth. Season with Italian seasoning and adjust salt and pepper.
  4. Combine cooked chicken and pasta into the sauce; toss well to coat.
  5. Stir in fresh greens until wilted before serving.
