  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear in olive oil in a large skillet over medium-high heat for 4-5 minutes each side until golden brown.
  2. In a medium saucepan, bring chicken broth to a boil. Add rice, cover, and simmer for 15-18 minutes until tender.
  3. In the same skillet, melt butter and whisk in flour until golden. Gradually add milk and broth to create a smooth sauce. Stir in cheeses and seasonings until thickened.
  4. Return chicken to the skillet, spoon sauce over it, cover, and simmer on low for about 10 minutes.
  5. Serve over cooked rice garnished with fresh parsley.
