  • 3 cups mirepoix (or 1 cup diced carrots, 1 cup diced celery, and 1 cup diced yellow onion)
  • pounds baby gold or red potatoes, diced
  • 2 cups frozen broccoli florets, thawed and chopped
  • 5 tablespoons unsalted butter
  • 3 cups whole milk
  • ½ cup heavy cream
  • 2 cups shredded sharp Cheddar cheese
  • 1 tablespoon olive oil
  • 1½ teaspoons Italian seasoning
  • ¾ teaspoon salt
  • ¾ teaspoon black pepper
  • 6 tablespoons all-purpose flour
  • 1 cup frozen corn
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large pot, melt 1 tablespoon of butter with olive oil over medium heat. Sauté mirepoix for 5-7 minutes until softened; add garlic for another 30 seconds.
  2. Stir in diced potatoes, Italian seasoning, salt, pepper, and chicken stock; bring to a boil. Reduce heat and simmer for about 10-15 minutes.
  3. Add broccoli and corn; cook for an additional 2-3 minutes until tender.
  4. In a medium saucepan, melt remaining butter and whisk in flour to create a roux. Gradually add milk while whisking until smooth; cook until thickened.
  5. Combine cream base with soup pot; stir in cheese gradually until melted.
  6. Adjust seasonings to taste and serve warm with fresh herbs as garnish.
