  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 12 small flour tortillas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt butter over medium heat. Sauté the onion until translucent, then add garlic and spices.
  3. Stir in the shredded chicken and half of each cheese; remove from heat.
  4. In a saucepan, make the sauce by melting butter, whisking in flour, adding chicken broth gradually until thickened, then mixing in sour cream and green chilies.
  5. Assemble enchiladas by filling tortillas with the chicken mixture, rolling them up tightly, and placing them seam-side down in a baking dish. Pour sauce over the top and add remaining cheese.
  6. Bake for about 25 minutes until bubbly and golden brown.
