Ingredients
- 2 lbs Yukon Gold or Russet potatoes
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 cloves garlic
- 1 tablespoon fresh thyme
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease a round baking dish.
- In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
- Layer half of the potato slices in the dish and drizzle half of the balsamic mixture over them.
- Add the remaining potato slices on top and pour the rest of the glaze over them. Press down gently.
- Cover with aluminum foil and bake for 45 minutes.
- Remove foil, sprinkle with Parmesan if desired, and bake uncovered for an additional 15–20 minutes until golden brown.
- Allow to cool for 5 minutes before slicing into wedges.
