Ingredients

  • 2 lbs Yukon Gold or Russet potatoes
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 1 tablespoon fresh thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a round baking dish.
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  3. Layer half of the potato slices in the dish and drizzle half of the balsamic mixture over them.
  4. Add the remaining potato slices on top and pour the rest of the glaze over them. Press down gently.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove foil, sprinkle with Parmesan if desired, and bake uncovered for an additional 15–20 minutes until golden brown.
  7. Allow to cool for 5 minutes before slicing into wedges.
