Ingredients
- 1 cup long-grain rice (white or brown)
- 2 cups vegetable broth or water
- 1 tablespoon vegetable oil
- 1 cup shiitake mushrooms, sliced
- 2 cups kale, torn into bite-sized pieces
- 1 medium carrot, diced
- 1 cup snap peas, trimmed
- 3 green onions, chopped
- 2 cloves garlic, minced
- Soy sauce and sesame oil for seasoning
Instructions
- Rinse rice under cold water until clear. Combine with vegetable broth in a pot; bring to boil. Cover and simmer for 15-18 minutes until absorbed.
- While rice cooks, prepare vegetables: slice shiitake mushrooms, dice carrot, trim snap peas, and tear kale.
- Heat oil in a large skillet over medium-high. Sauté mushrooms for 4-5 minutes until golden; set aside.
- In the same skillet, sauté kale for 2-3 minutes until crispy; set aside.
- Add carrot and snap peas to skillet; sauté for another 3-4 minutes. Stir in garlic and cook for an additional minute.
- Mix cooked rice with vegetables, add soy sauce and sesame oil. Season to taste.
- Cook for another 2-3 minutes before serving hot.
