Ingredients
- 4 pounds yellow potatoes
- 2 tablespoons kosher salt
- 1/2 teaspoon baking soda
- 1/4 cup duck fat (or olive oil)
- 1 tablespoon finely chopped fresh rosemary
- 1 whole head of garlic
- Black pepper and flaky sea salt for seasoning
Instructions
- Preheat your oven to 450°F and place a large roasting pan inside.
- Rinse potatoes under cold water, then boil in a large pot with salt and baking soda until fork-tender (about 25 minutes). Drain and let dry.
- Carefully remove the hot roasting pan from the oven, add melted duck fat, and toss in the dried potatoes with salt and pepper.
- Nestle the head of garlic in the pan and roast for 55–60 minutes, turning every 20 minutes until golden brown.
- Squeeze roasted garlic into a bowl, mash with rosemary and olive oil, then toss with the potatoes before returning them to the oven for an additional 5 minutes.
