  • 4 boneless chicken thighs
  • 1/2 lemon (zest and juice)
  • 1/4 cup chicken broth
  • 1/2 cup uncooked jasmine rice
  • salt
  • pepper
  • garlic powder
  • onion powder
  • crushed red pepper flakes
  • paprika
  • Italian seasoning
  • 1 clove garlic (or 1 tsp minced garlic)
  • 1/4 cup water

Instructions

  1. Place chicken thighs in the bottom of the slow cooker.
  2. Zest and juice half a lemon; mix with chicken broth and set aside.
  3. In a ramekin, combine salt, pepper, garlic powder, onion powder, crushed red pepper flakes, paprika, and Italian seasoning.
  4. Pour the lemon mixture over the chicken and sprinkle with seasonings. Add minced garlic on top.
  5. Cook on high for 2-3 hours or low for 6-8 hours until chicken is tender.
  6. About 20 minutes before serving, add water and jasmine rice to the slow cooker; cook covered until rice is fluffy.
  7. Serve warm with fresh parsley garnish.
