  • 1/2 cup vegetable oil
  • 2 large eggs

  • 1 cup buttermilk
  • 1 cup hot brewed coffee
  • 1 and 1/4 cups unsalted butter (for frosting)
  • 3 and 1/2 cups confectioners’ sugar (for frosting)
  • 3/4 cup unsweetened cocoa powder (for frosting)
  • 35 Tablespoons heavy cream (for frosting)
  • 1/4 teaspoon salt (for frosting)
  • 1 teaspoon pure vanilla extract (for frosting)
  • optional for decoration: semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, salt, and espresso powder (if using).
  3. In another bowl, mix the oil, eggs, vanilla extract, and buttermilk until smooth. Gradually add the dry ingredients and then stir in the hot coffee until combined.
  4. Divide the batter evenly into prepared pans. Bake for 23–26 minutes or until a toothpick comes out clean.
  5. Let cakes cool completely on a wire rack before frosting.
