  • 2 ½ pounds russet or Yukon gold potatoes
  • 3 tablespoons butter
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 2 ½ cups heavy cream
  • 3 tablespoons all-purpose flour
  • 3 cups cheddar cheese, grated
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Thinly slice the potatoes and set aside.
  3. In a saucepan over medium heat, melt butter, add onions and cook until softened. Stir in garlic and thyme.
  4. Add flour, then gradually whisk in heavy cream until smooth. Season with salt, pepper, and cayenne (if using). Mix in shredded cheese until melted.
  5. Layer half of the potatoes in the baking dish, pour half of the cheese sauce over them, sprinkle with cheese, and repeat.
  6. Cover with foil and bake for 40 minutes; remove foil and bake an additional 20 minutes until golden brown.
