Description

Easy Chicken Piccata is a quick and delicious Italian-American classic that brings the vibrant flavors of lemon and capers to your dinner table.


Ingredients

  • 2 large chicken breasts
  • Salt & pepper (to taste)
  • 1/4 teaspoon garlic powder
  • Flour (for dredging)
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth or dry white wine
  • 1 tablespoon lemon juice + zest of 1 lemon
  • 1 tablespoon brined capers (drained)
  • 1/2 cup heavy cream

Instructions

  1. Slice chicken breasts lengthwise into four cutlets, season with salt, pepper, and garlic powder, then lightly coat in flour.
  2. In a skillet over medium-high heat, melt 2 tablespoons of butter with olive oil. Cook chicken for 4–5 minutes per side until golden brown; then remove from pan.
  3. In the same skillet, combine chicken broth, lemon juice, zest, remaining butter, and capers while deglazing the pan.
  4. Stir in heavy cream and return cooked chicken to the pan. Simmer until heated through and sauce thickens (about 5 minutes).
  5. Serve garnished with parsley or parmesan cheese if desired.
