  • 4 cups cooked rice (long or short grain)
  • 2 tablespoons butter
  • 2 large eggs (whisked)
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 12 teaspoons minced garlic
  • 3 tablespoons lite soy sauce
  • 1/2 teaspoon sesame oil (or oyster sauce)
  • Salt and pepper to taste

Instructions

  1. Chill cooked rice in the refrigerator until ready to use.
  2. In a large skillet or wok, melt butter over medium heat. Add onions and carrots; cook for about 2 minutes.
  3. Stir in garlic and peas, pushing them to one side of the pan. Pour in whisked eggs on the empty side; scramble until fully cooked.
  4. Add chilled rice, mixing gently with vegetables and eggs.
  5. Pour in soy sauce and sesame oil; toss to combine. Season with salt and pepper to taste.
