- 7 g (2 1/4 teaspoons) instant yeast
- 2 teaspoons kosher salt
- 480 g (2 cups) lukewarm water
- 6 tablespoons extra-virgin olive oil (divided)
- Flaky salt (for topping)
- Optional: 1 tablespoon chopped rosemary
Instructions
- In a large mixing bowl, combine bread flour, yeast, and kosher salt. Create a well in the center and pour in lukewarm water. Stir until a shaggy dough forms.
- Drizzle 30 g of olive oil over the dough and mix to coat. Cover with plastic wrap and refrigerate for 18 to 72 hours.
- Prepare a 9×13-inch baking pan with non-stick spray and an additional drizzle of olive oil.
- Remove dough from the fridge and shape it into a ball. Transfer to the pan, allowing it to rise uncovered in a warm spot for 3-4 hours until nearly filling the pan.
- Preheat oven to 425°F (218°C). Drizzle remaining olive oil over the risen dough, create dimples with your fingers, sprinkle with flaky salt and optional rosemary.
- Bake for 25-30 minutes until golden brown. Let cool before slicing.
