Ingredients

  • 2 cups dry red lentils (rinsed & soaked overnight)
  • 1 medium white onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • ½ tablespoon chickpea flour
  • 2 tablespoons Italian seasoning
  • Sea salt & pepper to taste
  • Olive oil for frying

Instructions

  1. Rinse soaked lentils under cold water and drain well.
  2. In a food processor, combine lentils, onion, garlic, tomato paste, chickpea flour, Italian seasoning, salt, and pepper. Blend until smooth but slightly chunky.
  3. Form small patties (2-3 inches wide) from the mixture and place on parchment paper.
  4. Heat olive oil in a frying pan over medium heat. Fry patties in batches for 3-4 minutes per side until golden brown.
  5. For the dip, mix tahini, lemon juice, minced garlic, salt, and water in a bowl until smooth. Stir in minced parsley.
