Ingredients

  • 1 cup panko breadcrumbs
  • 400g cooked/canned salmon (drained)
  • 2 large eggs
  • 1/3 cup fresh dill (or 1 tsp dried)
  • 1/2 cup grated Parmesan cheese
  • 1 small onion (grated)
  • 1 garlic clove (minced)
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions

  1. In a mixing bowl, flake the drained salmon. Add grated onion, minced garlic, chopped dill, eggs, Parmesan cheese, salt, and pepper. Mix until combined.
  2. Stir in the panko breadcrumbs until the mixture holds together.
  3. Form the mixture into patties (4-6) about ½ inch thick.
  4. Heat oil in a non-stick skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown.
  5. Alternatively, bake at 375°F (190°C) on a greased baking sheet for 20-25 minutes.
