- 1 cup panko breadcrumbs
- 400g cooked/canned salmon (drained)
- 2 large eggs
- 1/3 cup fresh dill (or 1 tsp dried)
- 1/2 cup grated Parmesan cheese
- 1 small onion (grated)
- 1 garlic clove (minced)
- Salt and pepper to taste
- Vegetable oil for cooking
Instructions
- In a mixing bowl, flake the drained salmon. Add grated onion, minced garlic, chopped dill, eggs, Parmesan cheese, salt, and pepper. Mix until combined.
- Stir in the panko breadcrumbs until the mixture holds together.
- Form the mixture into patties (4-6) about ½ inch thick.
- Heat oil in a non-stick skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown.
- Alternatively, bake at 375°F (190°C) on a greased baking sheet for 20-25 minutes.
