Ingredients
- 2 servings dry instant ramen noodles (140 g)
- 10 oz extra firm tofu or your choice of veggies/mushrooms
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional)
- 2–3 tbsp corn starch
- 2–3 tbsp sugar (or liquid sweetener)
- 2 tbsp rice vinegar
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- 2 cloves garlic (optional)
Instructions
- Prepare the sauce by mixing all ingredients until well blended.
- Boil water in a large pot and cook the ramen noodles for about 2-3 minutes less than package instructions. Drain and set aside.
- In a non-stick skillet, sauté tofu or veggies over medium-high heat until cooked.
- Add the sauce to the skillet and simmer for 2-3 minutes until slightly thickened.
- Incorporate drained noodles into the skillet, tossing to coat evenly with the sauce.
- Cook for an additional 3 minutes until some sauce is absorbed.
- Garnish with sesame seeds or chopped scallions before serving.
