Ingredients

  • 2 tbsp vegetable oil
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 800 g boiled long-grain rice (4 cups)
  • 1/2 tbsp sesame oil
  • 2 eggs
  • 2 tbsp dark soy sauce
  • 1/4 tsp salt
  • 1/4 tsp garlic salt
  • 1 tbsp lemon juice
  • 1/2 bunch spring onions (chopped)

Instructions

  1. Heat 1 tbsp vegetable oil in a wok over medium heat and sauté the diced onion until soft.
  2. Add remaining vegetable oil and minced garlic, stirring until fragrant.
  3. Increase heat to high, add boiled rice and drizzle with sesame oil; toss to combine.
  4. Stir-fry until rice is heated through, about 5 minutes.
  5. Push rice to one side, crack in eggs with soy sauce, scramble gently.
  6. Mix the scrambled eggs back into the rice along with remaining soy sauce; season with salt and garlic salt.
  7. Drizzle lemon juice into the mixture, stir well, and serve hot topped with spring onions.
