  • 12 oz rigatoni pasta
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve ½ cup of pasta water.
  2. In a skillet, heat olive oil over medium-high heat. Sear chicken pieces seasoned with salt and pepper until golden brown. Set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add chicken broth and simmer briefly.
  4. Stir in heavy cream and Parmesan, mixing until smooth; adjust consistency with reserved pasta water if needed.
  5. Combine chicken and rigatoni with the sauce; toss to coat.
  6. Serve warm, garnished with fresh parsley.
