Ingredients

  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 1 ¼ lbs sirloin steak, cut into ½ inch cubes
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Heat a large cast iron skillet over medium heat. Add olive oil and two tablespoons of ghee.
  2. Once melted, add potatoes with minced garlic, thyme, oregano, salt, and pepper. Cook for about 10 minutes until golden brown.
  3. Increase the heat to medium-high and add remaining ghee before adding steak cubes seasoned with salt and pepper. Sear for about 3-4 minutes until browned.
  4. Combine cooked potatoes with the steak in the skillet. Adjust seasoning as needed before serving.
