- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cubed
- 3 garlic cloves, minced
- 1 lb sirloin steak, cubed
- Sea salt and black pepper
- Fresh parsley for garnish
Instructions
- Heat a cast-iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
- Add cubed potatoes, minced garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes until golden brown.
- Remove potatoes from the skillet; increase heat to medium-high and add remaining ghee.
- Sear steak cubes seasoned with salt and pepper for about 3-4 minutes until golden brown.
- Return potatoes to the skillet, mix well, adjust seasoning if needed, and serve garnished with fresh parsley.
