Ingredients

  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cubed
  • 3 garlic cloves, minced
  • 1 lb sirloin steak, cubed
  • Sea salt and black pepper
  • Fresh parsley for garnish

Instructions

  1. Heat a cast-iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee.
  2. Add cubed potatoes, minced garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes until golden brown.
  3. Remove potatoes from the skillet; increase heat to medium-high and add remaining ghee.
  4. Sear steak cubes seasoned with salt and pepper for about 3-4 minutes until golden brown.
  5. Return potatoes to the skillet, mix well, adjust seasoning if needed, and serve garnished with fresh parsley.
