  • 4 ounces uncooked pasta
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 1/2 medium onion (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup chicken broth or vegetable broth
  • 1/2 teaspoon lemon juice + zest of 1/2 lemon
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the pasta in salted boiling water until al dente, according to package directions.
  2. In a skillet over medium-high heat, heat olive oil and 1 tablespoon of butter. Add onions and mushrooms; sauté for about 8-10 minutes until browned.
  3. Stir in the remaining butter, garlic, and Dijon mustard; cook for 1 minute until fragrant.
  4. Pour in the broth along with lemon juice and zest; let bubble for one minute.
  5. Remove from heat and mix in parmesan cheese and parsley. Toss with cooked pasta, adding reserved pasta water if needed. Season with salt and pepper to taste.
