  • 4 boneless, skinless chicken breasts (or thighs)
  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil for potatoes
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Pat chicken dry and season with a mixture of Italian seasoning, smoked paprika, salt, and pepper.
  3. Toss halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper until evenly coated.
  4. Arrange seasoned chicken on one side of the baking sheet and spread potatoes on the other side.
  5. Roast for 25-30 minutes, flipping potatoes halfway through until the chicken reaches an internal temperature of 165°F (74°C).
  6. For extra crispiness, broil for the last few minutes if desired.
  7. Garnish with fresh parsley before serving.
