			- 2 pounds baby red potatoes
 - 8 slices bacon
 - 1 small yellow onion
 - 3 garlic cloves
 - 2 tablespoons honey
 - 2 tablespoons Dijon mustard
 - ⅓ cup apple cider vinegar
 - Kosher salt and black pepper to taste
 - Fresh parsley for garnish
 
Instructions
- Cook the potatoes in salted water until fork-tender (10-15 minutes). Drain and let cool before cutting into chunks.
 - In a skillet, fry bacon until crispy; drain on paper towels.
 - Sauté diced onion in bacon fat for 3-4 minutes, then add minced garlic and cook for another minute.
 - Whisk together honey, Dijon mustard, vinegar, salt, and pepper in the skillet with onions and garlic; cook briefly.
 - Combine potatoes with dressing and bacon in a bowl; toss gently to mix well.
 - Garnish with chopped fresh parsley before serving.
