  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 4 cups shredded romaine lettuce
  • 2 cups grape tomatoes
  • 2 cups diced cucumber
  • 1 cup sliced red onion
  • Tzatziki sauce (Greek yogurt, grated cucumber, garlic, dill)
  • 1/2 cup feta cheese

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound the chicken breasts to even thickness and marinate for at least 30 minutes.
  3. Make the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and dill until smooth.
  4. Cook rice or quinoa according to package instructions while prepping vegetables.
  5. Preheat air fryer to 380°F (193°C). Cook marinated chicken for about 10 minutes until it reaches an internal temperature of 165°F (74°C).
  6. Assemble bowls with rice or quinoa as the base topped with chopped veggies, sliced chicken, tzatziki sauce, and feta cheese.
