  • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup plain Greek yogurt
  • 1 tablespoon minced garlic
  • Fresh dill

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
  2. Pound the chicken breasts to about 1/2 inch thick. Marinate in the mixture for at least 30 minutes.
  3. While marinating, prepare tzatziki by combining Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill in a bowl; refrigerate.
  4. Cook rice or quinoa according to package instructions and chop vegetables.
  5. Preheat air fryer to 380°F and cook marinated chicken for about 10 minutes until fully cooked (165°F internal temperature). Alternatively, pan-fry in medium-low heat until golden brown.
  6. Let chicken rest for five minutes before slicing.
  7. Assemble bowls with rice or quinoa as the base, topped with vegetables and sliced chicken drizzled with tzatziki.
