  • 1 large English cucumber
  • 2 cups cherry tomatoes
  • 1/2 cup kalamata olives
  • 1 small red bell pepper
  • 1 small green pepper
  • 1 can (15.5 oz) chickpeas
  • 1 small red onion
  • Feta cheese (to taste)
  • Dressing: olive oil, garlic, red wine vinegar, lemon juice and zest, dijon mustard, oregano, sugar, salt, and pepper

Instructions

  1. Cook the orzo in salted boiling water until al dente (7-8 minutes). Drain and rinse under cold water.
  2. In a large bowl, combine cooled orzo with chopped cucumber, tomatoes, olives, peppers, chickpeas, and red onion.
  3. In a separate bowl, whisk together dressing ingredients until smooth.
  4. Pour the dressing over the salad and toss gently until well coated.
