- 8 ounces bowtie pasta
- 1 1/2 cups grape tomatoes
- 1 seedless cucumber
- 1 bell pepper
- 1/2 small red onion
- 1/2 cup Kalamata olives
- 2/3 cup feta cheese
- 1/4 cup chopped fresh parsley
- 1/2 cup olive oil
- 1/4 cup water
- 3 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1 teaspoon dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried dill
- 1 teaspoon dried mint
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Cook the bowtie pasta in salted boiling water until al dente. Drain and rinse with cold water.
- Chop the vegetables: tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
- In a jar, combine olive oil, vinegar, lemon juice, honey, mustard, minced garlic, oregano, dill, salt, and pepper. Shake well.
