  • 2 tablespoons seasoned rice vinegar

  • ⅓ cup chopped fresh parsley
  • Meat from 1 rotisserie chicken, cubed
  • 4 stalks celery, sliced
  • 1 bunch scallions, sliced and divided
  • 1 pint cherry tomatoes, quartered and divided
  • ½ English cucumber, diced
  • 3 bell peppers, halved and seeds removed

Instructions

  1. Prepare the dressing by whisking together Greek yogurt, Dijon mustard, and seasoned rice vinegar in a bowl. Season with salt and pepper.
  2. In the same bowl, add cubed rotisserie chicken, sliced celery, three-quarters of the scallions, cherry tomatoes, and cucumbers. Mix well to coat everything evenly.
  3. Halve the bell peppers and remove seeds. Stuff each pepper with the chicken salad mixture and garnish with remaining scallions and vegetables.
