  • 2 cups cooked rice or quinoa
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Juice of 1 lime
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lime wedges, for serving
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a bowl, mix olive oil, paprika, garlic powder, salt, pepper, cayenne (if using), and lime juice. Add chicken; coat well and marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Cook marinated chicken for 5–7 minutes on each side until fully cooked. Let it rest before slicing.
  3. Whisk together mayonnaise, sour cream, minced garlic, lemon juice, salt, and pepper until smooth.
