  • 1½ cups long grain white rice
  • pounds boneless skinless chicken strips
  • 8 corn tortillas
  • 2 ears sweet corn
  • 1 medium avocado
  • Fresh salsa and sour cream
  • Assorted fresh veggies (red bell pepper, red onion, grape tomatoes)

Instructions

  1. Rinse rice under cold water. In a medium saucepan, combine rice with 3 cups of water and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes. Remove from heat and let sit for 5 minutes. Fluff rice with a fork and mix in lime juice and cilantro.
  2. In a mixing bowl, combine olive oil, salt, pepper, chili powder, garlic powder, and oregano. Add chicken strips to the marinade and toss to coat evenly.
  3. Preheat grill or pan over medium-high heat. Grill chicken strips for 6–8 minutes per side until cooked through (165°F). Let rest before slicing.
  4. Grill sweet corn until charred on all sides (about 10 minutes). Remove kernels from cobs.
  5. Assemble bowls starting with rice base; top with grilled chicken, corn kernels, diced avocado, salsa, sour cream, diced veggies, and cilantro.
