  • 3 tablespoons Dijon mustard
  • 1 tablespoon finely chopped chives
  • 1/2 tablespoon finely chopped tarragon
  • 1 tablespoon finely chopped basil
  • 1/2 stick unsalted butter (room temperature)
  • Salt and pepper (to taste)
  • 1 piece of salmon fillet (or other protein)
  • Fish-friendly seasoning of choice
  • Grill paper

Instructions

  1. In a mixing bowl, combine softened butter, Dijon mustard, chives, tarragon, and basil. Season with salt and pepper to taste; set aside.
  2. Preheat the grill to 375°F (190°C).
  3. Place salmon on grill paper and season generously with fish seasoning.
  4. Grill salmon for about 10 minutes undisturbed.
  5. Add spoonfuls of the mustard-herb butter on top of the salmon and grill for an additional 10 minutes.
  6. Check the internal temperature; it should reach around 130°F (54°C).
  7. Serve hot with lemon wedges.
