  • 1 lb ground beef
  • 3 cups broccoli florets
  • 1 yellow onion, diced
  • 1 red bell pepper, sliced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon peanut oil (or vegetable/olive oil)
  • 2 tablespoons cornstarch + 2 tablespoons cold water
  • 12 tablespoons honey
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil
  • 3 cups cooked rice (any kind)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the sauce by mixing cornstarch with cold water and setting aside. In another bowl, combine beef broth, soy sauce, brown sugar, garlic, and sesame oil.
  2. Heat oil in a skillet over medium heat. Add broccoli and cook for about 4-5 minutes until slightly softened; set aside.
  3. In the same skillet, cook ground beef with onions until browned. Drain excess grease if necessary.
  4. Add bell peppers and pour in the prepared sauce. Bring to a boil and simmer for 2-3 minutes before adding the cornstarch mixture gradually until thickened.
  5. Return broccoli to the pan and stir well to combine. Serve hot over rice.
