  • 1 cup Guinness beer
  • 4 sticks unsalted butter (at cool room temperature)
  • 6 cups powdered sugar (sifted)
  • 1/4 cup plus 2 tablespoons Irish cream (such as Bailey’s)
  • 4 ounces semisweet or bittersweet chocolate (finely chopped)
  • 1/2 cup heavy cream
  • Sprinkles or chocolate curls for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix the wet ingredients: sour cream (or yogurt), vegetable oil, eggs, vanilla extract, and Guinness.
  4. Gradually combine the wet and dry ingredients until just mixed; avoid over-mixing.
  5. Divide the batter between prepared pans and bake for about 40 minutes or until a toothpick comes out clean.
  6. Once cooled, prepare the Irish buttercream by beating butter until creamy and then gradually adding sifted powdered sugar and Irish cream.
