  • 1 lb dried navy beans
  • 3 tablespoons oil
  • 1 white onion (chopped)
  • 4 carrots (chopped)
  • 2 celery stalks (sliced)
  • 5 garlic cloves (finely chopped)
  • 64 ounces chicken stock
  • 14.5 ounces fire-roasted diced tomatoes
  • 23 cups chopped ham
  • Fresh cracked pepper
  • Salt (to taste)

Instructions

  1. Rinse the navy beans under cold water and soak them overnight.
  2. In a large Dutch oven, heat oil over high heat. Sauté the onion, carrots, celery for 4–5 minutes; add garlic and sauté until fragrant.
  3. Add soaked beans, chicken stock, diced tomatoes, bay leaf, garlic powder, Italian herbs, and pepper. Bring to a boil, then reduce heat and simmer for about 90 minutes until beans are tender.
  4. Stir in shredded cabbage and chopped ham; cook for an additional 15–20 minutes until heated through. Adjust seasoning with salt if needed.
