  • 1 pound ground beef
  • 1 onion, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 5 cups beef broth
  • 15 ounces diced tomatoes with juice
  • 8 ounces tomato sauce
  • 2 teaspoons Worcestershire sauce
  • 3 cups frozen mixed vegetables (corn, green beans, carrots)
  • Fresh parsley for garnish

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Add ground beef, onion, celery, and garlic; cook until beef is browned. Drain excess fat.
  2. Stir in diced potatoes, beef broth, diced tomatoes (with juice), tomato sauce, Worcestershire sauce, salt, and pepper. Bring to a simmer for about 10 minutes.
  3. Add frozen mixed vegetables and continue to simmer for another 15-20 minutes until potatoes are tender.
  4. Taste the soup and adjust seasonings if necessary.
  5. Serve hot in bowls; garnish with fresh parsley.
