Ingredients
- 12 large eggs
- 32 ounces small curd cottage cheese
- 16 ounces shredded Colby Jack cheese
- 1 pound cooked bacon
- 1 cup small-diced red bell pepper
- 10 ounces frozen chopped spinach (thawed and drained)
- ¾ cup all-purpose flour (or gluten-free substitute)
Instructions
- Preheat the oven to 350°F and spray a 9×13-inch baking pan with nonstick cooking spray.
- Cook the bacon until chewy-crisp; chop into bite-sized pieces.
- In a large bowl, whisk together eggs, cottage cheese, melted butter, remaining bacon, spinach, half of the red bell pepper, and half of the Colby Jack cheese.
- Add flour, seasoned salt, black pepper, and half of the Parmesan cheese; stir until combined.
- Pour the mixture into the prepared pan and top with remaining cheeses and bell pepper.
- Cover with foil and bake for 40 minutes; then uncover and bake an additional 20–30 minutes until set.
