  • 1 ¾ cups whole wheat flour
  • ⅓ cup melted coconut oil
  • ½ cup honey or maple syrup

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9” x 5” loaf pan.
  2. In a large bowl, whisk together the melted coconut oil and honey until combined. Add in eggs (or flax eggs) and whisk until smooth.
  3. Mix in milk, baking soda, cinnamon, salt, and nutmeg until well blended.
  4. Stir in the grated zucchini. Gradually fold in the flour until just combined; avoid overmixing.
  5. Pour the batter into the prepared loaf pan and sprinkle with cinnamon on top.
  6. Bake for about 55 to 60 minutes or until a toothpick comes out clean from the center.
  7. Allow to cool before slicing.
