  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • ½ cup beef broth or water

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Brown the ground beef for about 5-7 minutes, then drain excess fat. Add chopped onion and minced garlic; cook until softened.
  3. Layer the ground beef mixture in the baking dish followed by thinly sliced potatoes. Season with salt, pepper, and Italian seasoning. Top with cheddar and Parmesan cheeses.
  4. Pour beef broth around the edges of the casserole and cover with aluminum foil.
  5. Bake for 30 minutes covered; then remove foil and bake for an additional 15-20 minutes until potatoes are tender and cheese is bubbly.
