  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 10 tablespoons unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons sour cream (or plain yogurt)
  • 1 large egg yolk
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, oats, salt, and baking soda. In another bowl, mix melted butter, brown sugar, and vanilla until combined.
  3. Combine dry ingredients with wet ingredients until mixed well. Reserve 3/4 cup for topping.
  4. Press remaining mixture into the pan and bake for 10 minutes.
  5. While crust is baking, whisk together sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and vanilla until smooth.
  6. Pour lemon filling over the warm crust and sprinkle reserved mixture on top. Bake for an additional 17-20 minutes until golden.
  7. Allow to cool completely before slicing into squares.
