- 3 ¾ cups (390g) cake flour (or 3 cups (360g) all-purpose flour)
- 2 cups (400g) granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon fine sea salt
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 ½ cups (340g) buttermilk, at room temperature
- 1 tablespoon pure vanilla extract
- 3 large eggs, at room temperature
- 2 large egg whites, at room temperature
Instructions
- Preheat oven to 350°F (175°C). Line two 9-inch cake pans with parchment paper and spray the parchment with nonstick cooking spray.
- In a stand mixer fitted with a paddle attachment, combine flour, sugar, baking powder, and salt. Mix well.
- Add the butter and beat on medium speed for about 1 minute until coarse.
- Reduce speed to low and add buttermilk and vanilla extract; mix for about 1 minute. Increase speed to medium and mix for another 30 seconds.
- Add eggs one at a time on low speed until fully incorporated. Then add egg whites and beat on medium-high for about 30 seconds until smooth.
- Divide batter evenly between prepared pans and smooth tops with a spatula. Bake for 25 to 30 minutes until golden brown and a toothpick inserted comes out clean.
- Let cakes cool in pans for about 5 minutes before transferring to a wire rack to cool completely.
