  • 1 lb Brussels sprouts, stems removed
  • 1 tbsp avocado oil
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 4 tbsp balsamic vinegar
  • 2 cloves garlic, grated
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the Brussels sprouts and place them on a baking sheet. Drizzle with avocado oil, sprinkle with salt and pepper, and toss to coat evenly.
  3. Arrange sprouts cut side down on the baking sheet and roast for 18-20 minutes until golden brown.
  4. While roasting, combine olive oil, honey, balsamic vinegar, and grated garlic in a saucepan over medium heat. Whisk together and simmer for about 5 minutes.
  5. Once the sprouts are done roasting, toss them with the balsamic sauce in a serving dish. Garnish with parsley before serving.
