  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, sear the chicken for about 3–4 minutes per side until golden. Remove from skillet.
  3. In a bowl, mix BBQ sauce, honey, and minced garlic.
  4. Toast uncooked rice in the same skillet for 1–2 minutes. Add chicken broth and half of the prepared sauce; mix well.
  5. Return chicken to the skillet; pour remaining sauce over it.
  6. Cover and simmer on low heat for about 15 minutes.
  7. Add mixed vegetables (if using) and cook for an additional 5 minutes until everything is cooked through.
  8. Let sit for 5 minutes before serving.
