  • 1 Honeycrisp apple, seeded and chopped into bite-sized pieces
  • 1 large bunch broccoli, chopped into florets (or one 12-ounce bag of prepared florets)
  • 1/2 cup chopped red onion
  • 1/2 cup raisins
  • 1/2 cup sunflower seeds
  • 4 slices bacon, cooked and crumbled
  • 3/4 cup plain yogurt
  • 2 tablespoons milk
  • 2 tablespoons apple cider vinegar
  • 1/2 cup sugar or 1/4 cup honey
  • Salt & pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a mason jar or small bowl, whisk together the yogurt, milk, apple cider vinegar, sugar or honey, salt, and pepper until smooth. Refrigerate until ready to use.
  2. In a large mixing bowl, combine the chopped apple, broccoli florets, red onion, raisins, and sunflower seeds. Toss well to mix.
  3. Slowly pour the dressing over the salad mixture. Toss gently to coat all ingredients evenly.
  4. Let the salad sit in the refrigerator for 30–60 minutes. This allows flavors to meld beautifully.
  5. Just before serving, sprinkle with crumbled bacon on top.
