  • 1 cup chopped sweet onion
  • 2 hard-cooked eggs, chopped
  • 2 mini sweet peppers, chopped
  • 1 cup shredded Irish cheese (Dubliner or aged cheddar)
  • 1/4 cup light mayonnaise
  • 1/4 cup plain Greek yogurt
  • 3 tablespoons sweet pickle relish
  • Fresh herbs (tarragon, thyme, basil)

Instructions

  1. Thaw peas in a large mixing bowl with cool water while preparing other ingredients.
  2. Soak chopped onion in water for 15 minutes to mellow the flavor; drain.
  3. Combine drained peas, soaked onions, eggs, peppers, and cheese in a mixing bowl.
