  • 1 cup raspberries (fresh or frozen)
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 3 cups all-purpose flour
  • ⅔ cup warm dairy-free milk
  • ½ cup vegan butter
  • 3 tablespoons sugar (granulated or coconut)
  • Instant dry yeast
  • Ground cinnamon and nutmeg
  • Pinch of salt

Instructions

  1. In a saucepan, combine raspberries, sugar, cornstarch, and water. Boil then simmer until thickened. Optionally puree for a smoother texture.
  2. In a stand mixer or bowl, mix flour, milk, vegan butter, sugar, yeast, spices, and salt until smooth. Knead until elastic.
  3. Allow the dough to rise until doubled in size.
  4. Roll out the dough into a rectangle, spread the jam evenly, roll up tightly, slice in half lengthwise, twist together, and place in a loaf tin.
  5. Let rise again until puffy then bake at 340°F for 30–40 minutes until golden brown.
