  • 1½ cups raw walnuts
  • ½ cup pumpkin seeds
  • ⅓ cup honey or maple syrup
  • ¼ teaspoon chipotle powder
  • 6 cups mixed salad greens
  • 2 cups frisée leaves
  • 12 apples or pears, diced
  • 2 avocados, sliced
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat cheese)
  • ⅓ cup extra virgin olive oil
  • ¼ cup balsamic or apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper, to taste
  • Chili flakes, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toss walnuts and pumpkin seeds with honey (or maple syrup), chipotle powder, and salt. Spread on the baking sheet and toast for 15 minutes.
  3. In a large bowl, combine mixed greens and frisée. Top with diced fruit, sliced avocados, pomegranate seeds, cooled nuts, and crumbled cheese.
  4. For the dressing: Combine all dressing ingredients in a jar and shake until well mixed.
  5. Drizzle dressing over the salad just before serving and toss gently.
