  • 15 sheets graham crackers
  • 2 tablespoons sugar
  • 6 tablespoons unsalted butter (melted)
  • 6 ounces cream cheese (room temperature)
  • 1 can (14 ounces) sweetened condensed milk
  • 4 egg yolks
  • 1 tablespoon lime zest
  • ½ cup key lime juice
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch pan with aluminum foil or parchment paper.
  2. Crush the graham crackers into fine crumbs. Combine them with sugar and melted butter in a mixing bowl.
  3. Press the crumb mixture evenly into the bottom of the lined pan and bake for about 10 minutes.
  4. In a separate bowl, beat cream cheese until smooth, then gradually add sweetened condensed milk.
  5. Mix in egg yolks one at a time, followed by lime zest, juice, and vanilla extract until well combined.
  6. Pour the filling over the hot crust, then return it to the oven for an additional 15–18 minutes until set.
  7. Allow to cool before refrigerating for at least 2 hours. Cut into bars and serve chilled.
